Happy Birthday Fifteen Spatulas!!!!!

YAY!!!!  It has been one year since my first post here at Fifteen Spatulas, and I can’t believe a year has already gone by!  When I first started the blog, I had no idea what I was doing or what I wanted from the experience.  But I had just decided not to work for a finance company downtown, and to pursue my passion in food instead, and the blog was the first step towards that.  That’s why it always has and always will hold a special spot in my heart!  It has been so much fun posting my scrapeworthy recipes here, and I want to thank all of you SO much for reading and making my recipes.  I love hearing from you all and I’ve enjoyed becoming “foodie friends” with so many of you.  And goodness, I’ve come a long way from when I started…the photography, the recipes, the food styling…all of it!  To celebrate, I baked my beloved blog a cake…well, cupcakes.  I did chocolate cupcakes with an Amaretto Fluff Buttercream (and yes, I made a wish, and my friend Leah and I actually sang it happy birthday).  Here’s the recipe:

Amaretto Fluff Buttercream:
2 sticks unsalted butter, at room temperature
4 oz cream cheese, at room temperature
1.25 cups confectioner’s sugar (or to taste)
3 tbsp amaretto liqueur
1/2 cup marshmallow cream

Directions:
Beat all ingredients together until combined, fluffy, and light.  Pipe onto cooled cupcakes (and if frosting is too runny, refrigerate it to firm it up).
